Our zenzai is made with 100% red beans from Hokkaido using only Honwaka Sugar (a safe sugar that retains the rich minerals, taste, and flavor of sugar cane from Okinawa with all impurities removed), and is homemade without any additives such as baking soda or salt.

Soda Water: We use naturally soft carbonated water from Iga, Mie, nurtured by the Suzuka, Shigaraki, and Nunobiki Mountains.

Our nyumen at Kaho is prepared with no additives using the method as kaiseki cuisine, using dashi soaked with Rishiri kelp for 12 hours and plenty of dried bonito, Yoshino kudzu, oil-less cooking, flat somen noodles from Miwa, Nara, Kujo leek from Kyoto, and selected Golden Ginger directly from Kochi Prefecture. This hand-pulled noodle is flatter and thicker than regular somen, so enjoy its throat-feel that is similar to thin udon.
